Ingredients
- 1 TB Olive Oil
- 1 Medium Onion
- 1 TSP Minced Garlic
- 1 Medium Zucchini
- 1 Medium Yellow Squash
- 2 Medium Potatoes
- 2 Medium tomatoes
- 1 TSP Thyme
- Salt & Pepper to taste
- 1 Cup Shredded cheese
Preparation
Step 1
Preheat oven to 400 F
Dice the Onion and sauté with garlic and olive oil until soft.
Slice Vegetables into rounds approx. 1/4 inch thick. (An old fashion tomato slicer works great to start and mark slices!)
Spray the inside of a square baking dish with non-stick spray. Spread the softened onion mixture in the bottom of the dish. Place the vegetables vertically in the dish in an alternating pattern. Sprinkle with salt, pepper and thyme.
Cover and Bake for 30-40 minutes. Remove lid, sprinkle with cheese and continue baking for an additional 15-20 minutes until cheese is golden brown.
