Ingredients

  • 3/4 c graham crumbs
  • 1 T sugar
  • 1 T melted unsalted butter
  • 32 oz cream chees @ room temp
  • 5-6 eggs @ room temp
  • 1 1/2 c sugar
  • 2 T cornstarch
  • 4 oz melted unsalted butter
  • 1 T vanilla
  • 1 T lemon juice
  • 16 oz sour cream
  • 1 tsp rum flavor
  • 1 c coconut
  • 1 can crushed pineapple

Preparation

Step 1

Prepare crust and press into a 9 inch springform pan. Refrigerate while preparing filling.

Whip the cream cheese until smooth. Add the eggs one at a time, sugar, cornstarch, butter, vanilla, lemon, sour cream and run. Whip until light and fluffly. Fold in the coconut and pineapple.

Mix all ingredients and bake at 375 degrees for 1 hour.
