Ingredients
- 3/4 c graham crumbs
- 1 T sugar
- 1 T melted unsalted butter
- 32 oz cream chees @ room temp
- 5-6 eggs @ room temp
- 1 1/2 c sugar
- 2 T cornstarch
- 4 oz melted unsalted butter
- 1 T vanilla
- 1 T lemon juice
- 16 oz sour cream
- 1 tsp rum flavor
- 1 c coconut
- 1 can crushed pineapple

Preparation
Step 1
Prepare crust and press into a 9 inch springform pan. Refrigerate while preparing filling.
Whip the cream cheese until smooth. Add the eggs one at a time, sugar, cornstarch, butter, vanilla, lemon, sour cream and run. Whip until light and fluffly. Fold in the coconut and pineapple.
Mix all ingredients and bake at 375 degrees for 1 hour.
