Stuffed French Toast

This is the base recipe for a stuffed French Toast. Let your imagination go wild when choosing the ingredients for your filling.
My personal favorite is chocolate chips in the filling, crushed walnuts on top drenched in caramel syrup.

Ingredients
- For the garnish:
- 16 oz cream cheese (2 packages)
- 2 Tbsp orange zest
- 6 eggs
- 1 3/4 cups Half & Half
- 1/4 cup frozen OJ concentrate (thawed)
- 1 1/2 Tbsp vanilla extract
- 1 loaf Texas Toast or other thick sliced bread
- 1/4 cup filling ingredients*
- 1 stick butter
- Powdered sugar
- Extra filling ingredient
- Syrup*
- *Your choice of fruit preserves, nuts, etc. My personal favorite is chocolate chips. The trick is to use a syrup that either matches or compliments your choice of filling.

Step 1
Mix together softened cream cheese, orange zest and ingredient of choice. Set aside.
Whisk together eggs, OJ concentrate, and vanilla extract. Pour into shallow bowl or pie plate. Set aside.
Carefully slice a pocket into each slice of bread. The trick here is (1) only cut on one side of the bread and (2) slice as deep as possible withour cutting through the other bread crust. Fill with heaping spoon of cream cheese mixture.
In a cast iron skillet, melt 1 Tbsp of butter. Dip filled bread into egg mixture. Brown for 1-2 minutes per side.
Each serving is 2 pieces of filled bread sliced diagonally. Garnish and serve hot.
A cool idea is to warm your syrup of choice before serving.
