OLIVE STUFFED PORK ROAST

Ingredients
- 1 1/2 lb pork roast
- 5 garlic cloves cut into halves.
- 3 tbs of Dijon mustard,
- 1 1/2 tbs olive oil,
- 1 tbs of rosemary leaf
- 2 Tbs of cracked black pepper.

Preparation
Step 1
Using a small sharp knife cut 10 to 12 slits into the meat Put a 1/2 garlic clove into each slit.
Mix together Dijon mustard, olive oil, rosemary leaf and cracked black pepper. Rub on roast.
Place roast uncovered into a 350 degree oven.
Roast until internal temperature reaches 150 degrees F.
Tent for 10 minutes prior to carving.
