- coconut milk
- lime
- cilantro

Step 1
Cook 1 cup of rice in 3/4 cup coconut milk and 11/4 cups water. When the rice is done, add the juice of half a lime along with 1/2 cup cilantro. Stir. Top with sauteed mushrooms, zucchini and red bell pepper.
