Ingredients
- 2 C gluten free flour (I use Bobs Red Mill)
- 1/2 C Coconut flour
- 1/4 t salt
- 1 t baking soda
- 1 C sugar
- 4 eggs beaten
- 1/3 C coconut oil (melted)
- 1/2 C applesauce
- 2 C bananas mashed (4 to 5)
- 1 t vanilla extract
- 1/2 C chopped walnuts
Preparation
Step 1
add all dry ingredients to bowl...set aside
in another bowl beat eggs, add coconut oil, applesauce, bananas and vanilla together and add to dry mixture, incorporating well,,,add nuts
spray muffin tins and fill 3/4 with mixture
Bake at 350 for 20-25 minutes
yields 24 muffins or 2 loaves (loaves will bake for 40-45 minutes)
