Ingredients
- 1 lb chicken breast, diced
- 2 T. coconut oil
- 2 shallots, chopped
- 4 cloves garlic, minced
- 1 large carrot, sliced
- 1/2 bundle of asparagus, chopped
- 2 T. fresh cilantro, chopped
- 6-8 fresh basil leaves, chopped
- 3 T. Sun Brand Madras Curry Powder
- 14.7 can coconut milk
Preparation
Step 1
In a large pot, heat oil over medium high heat. Add shallots and cook about 2 minutes until they begin to become transluscent. Add chicken, garlic, and curry powder mix. Cook until chicken starts to brown. Add remaining ingredients and cook over medium heat until it comes to a boil. Reduce heat and cook for about 15-20 minutes more (just until veggies soften).
