Roasted Summer Squash

Ingredients

  • Cooking spray
  • 2 med zucchini, halved lengthwise
  • 2 med yellow squash, halved lengthwise
  • olive oil
  • Salt and pepper
  • 1 tsp garlic powder
  • 2 tsp chopped fresh basil

Preparation

Step 1

Preheat oven to 450 degrees F.
Coat a large baking sheet with cooking spray.
Arrange squash halves, flesh side up, on prepared baking sheet. Drizzle olive oil over the squash. Season each squash with salt, black pepper and garlic powder. Sprinkle basil over top. Roast 8 to 10 minutes, until tender and golden brown
