  • 2 TBSP Canola Oil
  • 2 C. Sugar
  • 2 C. Brown Sugar - light
  • 1 C. half n half
  • 4 TBSP unsalted butter
  • 2 C. Pecan halves
  • 1 tsp Vanilla extract - pure

Step 1

Set 3 sheets of waxed paper on a work surface & brush with the oil. In a heavy-bottomed saucepan, combine the sugars, half n half & butter & heat, without stirring, over medium heat to 235`F on a candy thermometer, 20 to 25 minutes. Remove from heat & let cool 5 minutes. Stir in the pecans & vanilla. Work quickly, before the mixture hardens, drop by heaping tbsp onto the oiled wax paper. Allow to cool completely, about 30 minutes. If too thin, stir the nuts a few times with a wooden spoon to thicken before dropping.
