Buttermilk Pancakes

These fluffy buttermilk pancakes are quick and easy to make. Serve with real maple syrup and butter.

Ingredients
- 1 Cup all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 egg
- 1 1/8 Cup buttermilk
- 2 Tablespoons melted unsalted butter
- Canola oil for frying
- Maple syrup and butter
Preparation
Step 1
Heat 1 tablespoon canola oil in a heavy pan on medium. In a large bowl whisk together flour, baking soda, baking powder, sugar and salt. Add egg, buttermilk and melted butter and whisk until combined (batter will be lumpy). Drop 1/2 cup of pancake batter onto hot cooking surface. When bubbles form on top of pancake (about 3 minutes) carefully flip pancake over and cook on the other side (about 1 minute). Transfer cooked pancake to a platter and cover with foil and repeat until all the pancakes are prepared. Serve immediately with butter and maple syrup. Makes 3 large pancakes.
