Ingredients

  • 1 1/2 tbsp. unsalted butter
  • 1 1/3 tbsp. extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 whole chicken, cut into 8 pieces
  • 1/2 cup white wine
  • 8 3/4 oz. canned peeled tomatoes, chopped
  • 1 green or yellow bell pepper, cored, seeded, and chopped
  • Salt and freshly ground black pepper to taste
  • Fresh rosemary sprigs for garnish

Preparation

Step 1


Place a large pan on the stovetop and add a little oil.

Once brown, remove then pan from the heat and transfer the chicken to a oven-safe skillet. Place the meat in a 350°F oven for 20 minutes.

Then wash and chop the onion, celery and carrot. Heat another pan on the stovetop and add butter and oil.. Once melted, add the chopped vegetables and sauté.

Then add the chicken and pour in the wine.

Let evaporate. Add the tomatoes and bell pepper. Season with salt and pepper. Cover and cook over a low heat, until chicken is tender and cooked through, about 40 minutes.

Serve garnished with rosemary, if desired.
