PORK FRIED RICE

Almost like the real thing. Easy too! The picture is vegetable fried rice, but I have made the Pork Fried Rice also.
Ingredients
- 1/2 lb Pork Fillets (or chicken, shrimp, veggies) cut into dice
- 1/4 cup Canola Oil
- 4 large Eggs, lightly beaten
- 1 Medium Red Onion finely diced
- 1 Tbls. Finely diced Fresh Ginger
- 2 Tsps White Sugar
- 2 Tbls Housin Sauce
- 2 Tbls Light Soy Sauce (or low sodium Teriyaki)
- 1 Tbls Malt Vinegar
- 1/4 Tsp Sesame Oil
- 4 Cups cooked Rice (can use brown rice)
- 2/3 Cup finely sliced Scallions
Preparation
Step 1
Heat half oil in hot wok or large frying pan until it seems to shimmer. Pour beaten eggs into pan and leave to cook on the base of the pan for about 10 sec before folding egg mixture over onto itself with a spatula and cook for about 1 min until almost done. Carefully remove omelette from pan and drain on towel paper.
Heat remaining oil in pan and stir fry onion and ginger for around 30 seconds. Add sugar and stir fry for 30 seconds. Add pork and stir fry for around a minute. Stir in hoisin sauce, soy sauce, vinegar and sesame oil and cook, stirring for 1 minute. Toss in rice and omelette and stir fry, using a spatula to break up the egg into pieces, for around 1 minute.
Lastly, add scallions and stir fry until well combined and rice is heated through
