Ingredients

  • 3 lb spinach
  • raw rice
  • 1/2 lb cottage cheese
  • 1 lb feta cheese
  • 4 scallions
  • salt/pepper
  • olive oil
  • butter
  • phyllo dough

Preparation

Step 1

Clean and chop spinach. Mix with a handful of raw rice. In bowl mix the cheeses. Chop the scallions. Mix all ingredients and drizzle with olive oil. Toss like a salad.

Layer the phyllo/melted butter and continue in 8 more layers. Add a layer of the spinach mixture. Repeat 3 more times. Cut through, but not totally, into square serving pieces.

Bake at 375 degrees for 45 minutes till golden. Refrigerate.
