Ingredients

  • Sauce:
  • Graham cracker crust
  • 1/2 c soft butter
  • 1/2 c sugar
  • 2-2 oz unsweetened baking chocolate (melt/cool)
  • 3 egg yolks at room temp
  • 1 tsp vanilla
  • 3 egg whites at room temp
  • 1/4 c sugar
  • 1/2 c heavy cream
  • 10 oz pkg frozen red raspberries
  • 1/4 c raspberry jam
  • 1 T cornstarch

Preparation

Step 1

Prepare a graham cracker crust and set aside.

Cream butter and 1/2 c sugar in small bowl until light and fluffy. Add cooled chocolate; beat well. Add yolks one at a time, beating well after each addition; stir in vanilla. Beat egg whites until foamy, then gradually add 1/4 c sugar beating until stiff peaks form. Fold egg white mixture into chocolate mixture. Whip cream until stiff and fold into chocolate mixture.

Pour into the prepared crust. Cover with saran and chill until firm.

Drizzle with raspberry sauce.

Raspberry Sauce:

Drain 10 oz pkg thawed frozen red raspberries, reserving the syrup. In small saucepan, stir together 2/3 c reserved syrup, 1/4 c jam and 1 T cornstarch. Cook over low heat, stirring constantly until thickened and clear. Cool. Stir in raspberries.
