Ingredients

  • Bunch of fresh string beans(bout 2 pounds)
  • 1 1/2 onions chopped
  • olive oil
  • 1 28 oz can tomato sauce
  • 1 28 oz can italian style plum tomatoes whole,
  • preferably san marzano, crushed a bit with hands
  • Freshly ground black pepper
  • Fresh whole basil leaves, about 20 torn.
  • Salt

Step 1

Snap ends of your string beans. Boil a large pot of water, salted. When boiling toss in your string beans and cook for about 4 minutes till slightly softened. RESERVE 1 cup cooking liquid before you drain into strainer.

Meanwhile, start sauce. Heat up some olive oil in pan. Cook your chopped onions till soft, but not brown. Add your 2 cans sauce, black pepper to taste. Bring to a boil, lower to a simmer, cover partially and cook for 20 minutes. Add in your torn basil and reserved liquid, cook on low till basil is wilted.

Throw in your string beans and cook, partially covered, for another 20 minutes. More salt and pepper to taste.
