Chrispy Potato Bites

A friend showed me a similar recipe but I couldn't remember what she did, so this is my take on it. A great substitute for fries and the kids loved it!

Ingredients
- 1package fingerling potatoes, sliced in half
- 3 tablespoon olive oil
- 3/4 cup parmesan
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon Italian seasoning
- Cooking Spray
Preparation
Step 1
Preheat Oven to 450°F.
Using a large casserole dish, spread the oil around so that there is a light coat across the bottom of the entire dish.
Mix the Parmesan, onion, garlic powders and sprinkle evenly across the bottom of the dish. Do not attempt to mix it in the dish, the oil will make it clump and you'll have a sad face.
Cut the Potatoes in half. Place even cut side down on top of the parmesan mixture.
Spray the tops of the potatoes with Cooking Spray (Olive Oil preferably). Then sprinkle the Italian Seasoning on top. The Cooking spray will help the seasoning to stick.
Optionally add a little more parmesan on top (I do this, but I'm part mouse).
Bake for about 40 to 45 minutes. The cheese on the bottom will brown into a 'crust' and the potatoes will have a golden brown finish.
Let it cool for a finger food type of appetizer, or serve warm as a side dish. I use these instead of fries when making burgers.
