  • 2 cups blueberries (9 ounces)
  • 1/4 cup sugar
  • Makes 6 tablespoons syrup - enough for two servings
  • Beverage:
  • 2 scoops vanilla ice cream
  • 1/2 cup seltzer

Step 1

Syrup:

Stir together blueberries and sugar in a small saucepan over medium heat. Cook stirring occasionally until sugar dissolves and berries release their juices, 10-12 minutes. Strain syrup (do not press down on berries0; discard solids. Refrigerate until cool.

For Beverage:

Pour 1 tablespoons syrup into a chilled class. Add 2 scoops vanilla ice cream. Drizzle with an additional tablespoon syrup. Top with 1/2 cup seltzer and stir.
