Ingredients

  • 4 cod filets, frozen or fresh
  • Paprika
  • salt and pepper to taste
  • Mango Salsa1 mango, peeled and diced
  • 1/4 cup red pepper, diced
  • 1 tablespoon green onions, chopped
  • 1 tablespoon fresh cilantro, minced
  • 1 tablespoon fresh lime juice

Preparation

Step 1

Preheat oven to 400 degrees Fahrenheit.
Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
Place cod on baking sheet and sprinkle with paprika, salt and pepper.
Bake for 22-25 minutes or until fish is cooked to 145 degrees and separates easily with a fork.
Combine mango, red pepper, green onions, cilantro and lime juice in bowl. Stir until combined.
Just before serving, top each filet with mango salsa.
