Ingredients

  • 4 boneless, skinless chicken breast halves
  • Olive oil as needed
  • 2 cups baby spinach, chopped
  • 1/2 cup of mozzarella cheese
  • 1/2 cup grated Parmigiano-Reggiano cheese
  • Salt and freshly ground pepper, to taste
  • Oregano and basil, to taste
  • optional: breadcrumbs

Preparation

Step 1

Directions:

Preheat the oven to 350 degrees.

Pound the chicken to 1/4-inch thickness between plastic wrap with a mallet, set aside.

In a medium bowl, combine the cheeses and spinach, set aside

Combine the oregano and basil with breadcrumbs in a small bowl and set aside.

Spoon about 1/4 cup of the spinach mixture onto each chicken breast. Roll the chicken breast snuggly and fasten with kitchen twine (100% cotton twine that is non toxic).

Brush each chicken breast with the olive oil and gently roll the chicken in the bread crumb mixture to coat.

Place the chicken rolls onto a aluminum foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.

*Variations you can try:*

1. Roasted red peppers and feta cheese with a dash of lemon zest instead of spinach/cheese.

2. Spinach, artichoke and cream cheese.

3. Wrap with prosciutto or cooked ham instead of wrapping with twine.

4. Add parmesan cheese to the bread crumbs.
