Ingredients
- 4-5 bell peppers – sliced
- 4-5 cloves of garlic – sliced
- 1 onion – sliced
- 4 zucchini – yellow or green – quartered
- 1 jalapeño – sliced with seeds
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. ground oregano
- 3-4 tablespoons of olive oil
Preparation
Step 1
Preheat the Oven 350 degrees:
Place all of the vegetables in a baking pan. Add the seasonings and the olive oil and place it in the oven to bake for 40 - 45 minutes tossing once during the cooking.
