
Ingredients
- 1/2 lb cubed beef stew meat
- salt and pepper
- 2 TBS flour
- 1 TBS oil
- 3 cups tomato juice
- 14.5 OZ beef broth
- 14.5 OZ (1 can) diced tomatoes
- 10 OZ frozen mixed vegetables
- 1 C cubed potato
- 1 C shredded cabbage

Preparation
Step 1
Mix flour, salt and pepper in bag. Add meat and shake to coat.
Heat oil in large pot. Add beef and brown on all sides. Add tomato juice and beef broth. Stir to combine. Stir in diced tomatoes, mixed vegetables, potatoes and cabbage. Bring to a boil, then reduce heat, cover and simmer for 1 hour or until potatoes are soft and meat is fully cooked.
