Ingredients
- Cookies:
- 1 cup Butter, softened
- 1/2 cup Brown Sugar
- 1/2 cup White Sugar
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1-1/2 tsp Cinnamon
- 1 tsp Ginger
- 1/2 tsp Nutmeg, freshly grated
- 1/2 tsp Cloves
- 1/4 tsp Allspice
- 2 Eggs
- 3 tsp Vanilla
- 1-1/4 to 1/3 cups Pumpkin
- 2-1/2 cups White Whole Wheat Flour
- 2/3 cup Caramel Bits
- 2/3 cup Chocolate Chips
- Frosting:
- 4 tbsp Butter, softened
- 1/3 cup Brown Sugar, packed
- 1 tsp Vanilla
- 2 cups Powdered Sugar
- Cream or Milk until desired consistency
Preparation
Step 1
Heat oven to 350 degrees.
In a large bowl, mix the butter on medium to high speed for about 30 seconds. Add the sugars, baking powder, baking soda, salt, and all of the spices. Beat until combined. Scrape down bowl.
Add the eggs and vanilla. Beat until combined. Beat in pumpkin and scrape down bowl. Add the flour and mix until well combined. Add caramel bits and chocolate chips with mixer on low speed.
Scoop out desired size and place on parchment covered baking sheet. Bake for 10 to 15 minutes, depending on the size scoop you use. They cookies should be brown around the edges.
Let cookies sit on pan for a few minutes before transferring to a wire rack to cool.
Frosting:
In a bowl, melt butter in microwave about 30 seconds and add brown sugar. Stir in part of the milk and vanilla. Beat in the powdered sugar. Add more milk as need until it is a smooth spreading consistency. Spread on cookies. You can add a sprinkle of cinnamon if desired.
