Ingredients

  • 1 Cup Brown Sugar - well packed down
  • 3/4 Cup granulated white sugar
  • 1 cup soften butter
  • 1 1/2 teaspoon gluten free vanilla
  • 2 eggs
  • 2 1/2 Cups Gluten Free Rice flour
  • 2 teaspoons xanthan gum
  • 1 teaspoon gluten free baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 - 12 oz semisweet choc chips
  • 1 cup chopped walnuts

Preparation

Step 1

Prep-heat oven to 375 F. In a large bowl or mixer bowl beat sugars and butter with vanilla, mix on low speed or mix by hand until light and fluffy. Add eggs and mix well.

In a medium bowl stir in the flour. Xanthan Gum baking powder, baking soda , and salt. mix all together well. slowly add the flour mix to the set mix, while the mixer is on low speed. As it mixes increase the speed until all is well mixed. Add the chips and walnuts, mix well.

on an un-greased cookie sheet, spoon the mix in drop form. Cookies should be about 2 inches apart on the cookie sheet pan. Bake about 9 to 10 minutes or until the cookies are brown and ready. Cool on a cookie rack and store in an air tight container.
