  • 2 tbsp black peppercorn, crushed
  • 1 14oz new york strip steak
  • salt
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1/3 cup brandy
  • 1 cup cream
  • 1 tbsp dijon mustard
  • 1 tbsp butter

Preparation

Step 1

Place peppercorns in a tea towel and then crush with the bottom of a pan. Place crushed peppercorn in a bowl.

Lay steak out. Sprinkle with salt and peppercorns. Rub and press the salt & pepper in.

Place vegetable oil in a large frypan with butter. Melt the butter while heating the oil. Once that is done and the pan is hot sear the steak on all sides. Put steak aside

In the same frypan add brandy. Whisk brandy to pick up what was left in pan from searing steak, then add cream, dijon mustard and tbsp of butter. Heat and whisk. Bring to a gentle boil until sauce thickens.

Slice steak and serve with warm peppercorn sauce. Enjoy!
