Ingredients

  • 1 lg head cauliflower (2 lbs)
  • 1/2 c. chopped celery
  • 1/2 c. chopped gr. pepper
  • 1/2 c. chopped onion
  • 3 tbs butter
  • 1 c. milk
  • 2 tsp cornstarch
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp paprika
  • 1 c. shredded Swiss cheese

Preparation

Step 1

Separate cauliflower into flowerets. Arrange in a steamer. Place steamer over boiling water, cover and steam until crisp tender. Arrange in a baking dish. Sauté celery, peppers and onions in butter until tender. Combine milk and cornstarch and add to veggies. Stir in seasonings. Cook over medium heat until thickened. Add cheese stirring until melted. Pour sauce over cauliflower. Bake at 475 degrees for 10 minutes. Serves 6.
