Ingredients

  • 4 lbs of chicken wings, olive oil, 3 T butter, 3 T hot red pepper sauce, 6 celery stalks cut into 3 x 1/4 inch sticks.
  • Blue Cheese Dressing: 1/2 cup mayonnaise, 1/2 cup sour cream, 1/3 cup crumbled blue cheese, 1 garlic clove - crushed, 1 T lemon juice. Combine all the ingredients in a bowl. Makes about 1 1/2 cup.

Step 1

Pour 1/2 inch oil into a large skillet; heat over medium heat until almost smoking. Add as many wings as will fit into the skillet without crowding. Fry until golden brown for about 10 minutes, turning once. Heat oven to 250 degrees. Drain cooked chicken on paper towels lined on a baking sheet. Remove paper towels and keep chicken warm in oven while frying the remaining chicken wings. After all the wings are cooked, pour off fat from skillet. Add butter to skillet over medium-low heat. Stir in the hot pepper sauce. Arrange wings on serving plate and drizzle with hot pepper sauce. Serve with celery sticks and Blue Cheese Dressing.
