Kiwi Jam

Try this delicious kiwi jam recipe.I tried this recipe, which originally called for one package of pectin. I have a large jar of Ball Real Fruit Classic Pectin, so I wasn't sure how much I should use. I ended up using 3 T and it ended up PERFECT! I'll be making another batch this weekend :)

Ingredients

  • 3 cups chopped peeled kiwi (7- large kiwis)
  • 3 tablespoons ball classic real fruit pectin
  • 1 cup unsweetened pineapple juice
  • 4 cups sugar

Preparation

Step 1

Combine kiwi, pectin and pineapple juice in a large saucepan.

Bring to a boil stirring constantly.

Add sugar, stirring until disolved.

Return to a rolling boil.

Boil hard for 1 minute, stirring constantly.

Remove from heat-skim off foam.

Ladle into clean hot jars leaving 1/4 inch head space.

Process 10 minutes in a boiling water bath at altitudes up to 1000 feet.
