Roasted Butternut Squash

Ingredients

  • 1 med butternut squash, halved lengthwise and seeded
  • 2 teaspoons butter
  • 2 teaspoons brown sugar
  • Salt and pepper

Preparation

Step 1

Preheat oven to 400 degrees F. Cut squash in half lengthwise. Place butternut squash halves on a large baking sheet flesh side up. Place 1 teaspoon of butter and brown sugar in the middle of each squash. Season the squash with salt and pepper. Roast 25 minutes, until flesh is fork-tender. Remove and cool until able to handle. Remove squash from flesh by scraping with a fork. Place in serving bowl mix or mash until smooth. Heat and serve.
