Homemade Sweet Italian Sausage

It's easy to make your own Italian-style sausage with a lot of delicious herbs and spices. This recipe can be frozen for later or refrigerated and used in your favorite recipes after 12 hours. Homemade Sweet Italian Sausage is the perfect recipe for your next brunch or breakfast buffet party or just any lazy weekend morning when you have plenty of time to indulge in sausage, eggs, and the usual breakfast spread. This recipe is also perfect for whipping up on any busy weekday morning!

Ingredients
- 2 pounds ground pork
- 2 tablespoons red wine vinegar
- 2 teaspoons salt
- 2 teaspoons freshly cracked black pepper
- 2 1/2 teaspoons dried parsley
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons dried basil
- 1 1/4 teaspoons paprika
- 1 1/4 teaspoons crushed red pepper flakes, or to taste
- 1/2 teaspoon ground fennel seed
- 2 tablespoons brown sugar
- 1/8 teaspoon dried oregano
- 1/8 teaspoon dried thyme
Preparation
Step 1
Place the pork and red wine vinegar in a mixing bowl. Sprinkle with salt, black pepper, parsley, garlic powder, onion powder, basil, paprika, red pepper flakes, fennel seed, brown sugar, oregano, and thyme. Knead until flecks of spice are evenly distributed through the sausage.
Divide the sausage into thirds, and form into 3 logs; wrap each in plastic wrap. Place wrapped sausage into a freezer bag before freezing, or store in refrigerator for at least 12 hours before cooking
