Ingredients
- 10 oz. ground turkey
- 3 cloves garlic, minced
- 2 scallions, thinly sliced
- 1 zucchini, sliced and quartered
- 1 1-inch piece of ginger, minced
- 1 T. Sambal Oelek
- 1/4 c. hoisin sauce
- 1/4 c. Panko breadcrumbs
Preparation
Step 1
Heat 2 teaspoons olive oil in a medium pan until hot. Add the garlic, ginger and white bottoms of the scallions. Cook, stirring occasionally, 1 to 2 minutes until softened and fragrant. Transfer to a bowl. Add the ground turkey, breadcrumbs, the sambal oelek and 1 tablespoon of the hoisin sauce to the bowl. Season with salt and pepper and mix until combined. Form the mixture into 12 to 14 meatballs.
Heat 2 teaspoons of olive oil in the medium pan. Add the meatballs and cook, turning often, 4 to 6 minutes or until browned on all sides. Transfer to a plate and keep warm.
Add 1 teaspoon olive oil to the pan of fond. Add the zucchini and cook 2 to 3 minutes. Add the browned meatballs, remaining 3 tablespoons of hoisin sauce and 1/2 cup of water to the pan. Cook 3 to 5 minutes or until sauce has thickened. Season with salt and pepper.
Can be served over rice or couscous for additional smart points.
