Ingredients
- 2 cups White Whole Wheat Flour
- 1 Tbsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 2 Tbsp Brown Sugar
- 1/2 tsp Black Pepper
- 1/8 tsp Cayenne Pepper
- 1-1/2 cups Grated Cheddar Cheese
- 6 strips Bacon, cooked and cut into strips
- 1 small Onion, chopped and carmelized
- 2 Eggs, beaten
- 1 cup Buttermilk
- Hot Pepper Sauce, to taste
- 1/4 cup Butter, melted
Preparation
Step 1
Heat oven to 350 degrees.
Cook bacon in skillet until crisp. Drain on paper towels and cut into desired size and shape. Add chopped onions to pan and cook about 5-10 minutes, until tender and starting to caramelize. Remove from pan with a slotted spoon and let the bacon grease drip off.
In a large bowl, add flour, baking powder, baking soda, salt, both peppers. Toss until well mixed. Add the grated cheese. Toss until completed covered and mixed.
In a separate bowl, mix the buttermilk, eggs, a couple shakes of hot sauce and melted butter. Stir in the onions and bacon. Pour over the dry ingredients and fold in just until combined. Don't overmix!!
Pour into a prepared loaf pan and bake for about 50 minutes, or until a toothpick comes out clean. Cool for about 10-15 minutes in the pan and then remove to a cooling rack to cool completely.
Slice and enjoy with Whipped Sweetened Butter.
