Ingredients

  • 3 cups cooked white rice
  • 2 cups milk
  • 1 cup heavy cream (use up to 1/2 cup more to make creamier)
  • 2/3 cup sugar
  • 1 tsp salt
  • 3 tbsp butter
  • 1 cup raisins
  • 1-1/2 tsp vanilla
  • 1 tsp lemon peel
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg

Step 1

Over medium heat, in medium non-stick saucepan, add rice, milk, heavy cream, sugar, butter & salt. Add raisins and vanilla.
Cook for 25 to 30 minutes or until most of the liquid is absorbed.
Mix in lemon peel, cinnamon and nutmeg.
Remove from heat, and put in large bowl.

Serve at room temperature or chilled.
