Avocado & Bacon Deviled Eggs

Ingredients

  • 12 hard boiled eggs, peeled
  • 1/3 cup mashed avocado
  • 1 tbsp mustard
  • 2 tbsp minced parsley
  • salt and freshly ground pepper, for seasoning
  • 2 slices bacon, cooked crisp and crumbled

Preparation

Step 1

Slice the eggs in half lengthwise and separate egg yolks. In a mixing bowl, combine the egg yolks, avocado, mustard and parsley. Mash mixture with a fork until well blended and smooth. Season to taste with salt and pepper.

Fill the egg halves with the yolk mixture and garnish with the bacon. Serve immediately, refrigerating any leftovers.
