CJ's Lemon Pie

Ingredients
- Topping:
- 1 Graham Cracker Pie Crust (2x Servings)
- 2 cans sweetened condensed milk
- 3 egg yolks
- 2/3 cup lemon juice
- 1/8 tsp salt
- 1 small carton (1 cp) whipping cream
- 2 tbsp sugar
- 1 tsp vanilla

Preparation
Step 1
1. Preheat oven to 350 degrees
2. In a bowl combine milk, eggs, lemon juice and salt. Beat on medium speed for 4 minutes
3. Pour mixture into piecrust. Bake 10 minutes. Cool on counter for 30 minutes. Place in refrigerator for 1 hour until set.
4. Combine whipping cream, sugar and vanilla. Beat on high until fluffy…spread on cool pie.
