Ingredients
- MANDARIN COLESLAW
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 tablespoon spicy brown mustard
- Juice of 1 lemon
- 1/4 teaspoon each salt and pepper
- 1 packaged coleslaw (or fresh)
- 3 Buddy mandarin oranges, peeled and segmented
- CHICKEN
- 4 chicken breasts, seasoned, grilled and sliced
- 8 taco shells
- 1 cup guacamole
Preparation
Step 1
COLESLAW
In a small bowl, whisk together vinegar, oil, honey,
mustard, lemon juice, salt and pepper. Place coleslaw
mix in a medium bowl. Drizzle with dressing and toss
well to coat. Add mandarins and stir to combine.
TACOS
Divide chicken equally among taco shells. Top with coleslaw
and guacamole. Makes 4 servings.
