Ingredients

  • 2 sticks marg or butter
  • 1 1/2 cups brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 Tbs soy milk or milk
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 cups flour
  • 1 cup caramel chips
  • 1 cup cornflakes,slightly crushed(leave some texture)

Preparation

Step 1

Preheat oven to 350. Line a baking sheet with parch paper or grease lightly and set aside.
Cream marg and sugar until fluffy. Add egg,vanilla extract,soy milk,baking soda,and salt ,beating well after each addition until combined.Slowly add the flour and beat until just combined.
Stir in the caramel chips and cereal until evenly distributed. Using a medium cookie scoop(or a heaping Tbs) drop the dough onto prepared cookie sheet,leaving room between each cookie,since they will spread(alternately refrigerate cookies before baking). Bake until cookies are set,about 8-10 min.
