Ingredients

  • 1 LB of Chicken Thighs
  • 2 Tbsp of red curry paste
  • 1 can light coconut milk
  • 1/3 cup light peanut butter
  • 1 white onion
  • 1 in ginger
  • 4 garlic cloves
  • 4 oz sobe noodles
  • 1 qt chicken stock
  • green onion
  • cilantro

Preparation

Step 1

Set pressure cooker to brown

Cook paste, onion, ginger, garlic

Add, peanut butter, coconut milk, chicken, and stock

Lock and set to high for 13 minutes

Let pressure cooker naturally release

Pour over cooked noodles and garnish with green onion and cilantro
