Ingredients

  • 4 cups of rice
  • 6 slices of bacon
  • 1 medium onion, chopped
  • 1 small bell pepper, chopped
  • 1 (28 oz) can of tomatoes, mashed with fork
  • 1 3/4 cups of ketschup
  • 1 tsp. Worcestershire sauce
  • 1 tsp. salt
  • a dash of black pepper
  • Hot sauce to taste

Preparation

Step 1

Preheat the oven to 350 degrees.

Cook 4 cups of rice according to package instructions. While the rice is cooking, fry the bacon in a pan until crispy. Crumble the bacon and set aside. Remove 2 tablespoons of bacon grease to use in casserole.

Fry onion and peppers in bacon grease until soften.

Combine all ingredients together and place in a casserole dish. Remember to add pepper and hot sauce to taste.

Bake for 45-50 minutes in a 350 degree oven until bubbly.
