  • 4 eggs
  • 1 1/2 cups milk
  • 1 cup heavy cream
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon Kosher salt
  • 1 cup candied walnuts (chopped)
  • 4 apples (peeled, cored, chopped)
  • 1 loaf brioche (cut into 1-inch cubes)
  • powdered sugar (for serving)
  • whipped cream (for serving)
  • maple syrup (warm for serving)

Preparation

Step 1

In a large bowl, add the eggs, milk, heavy cream, sugar, brown sugar, cinnamon, and vanilla extract and stir to combine.

In another large bowl, add the walnuts, apples and bread and stir to combine.

Pour the egg mixture over the bread mixture and stir to combine. Pour the bread mixture into a 9 x13-inch baking dish. Cover with aluminum foil and place in the refrigerator to chill overnight.

Preheat the oven to 350ºF.

Place the bread pudding in the oven and bake, covered with foil for 30 minutes. Remove the foil and bake another 15 minutes until set and golden brown.

Serve warm with powdered sugar, whipped cream and maple syrup.
