Ingredients
- 4 tbs butter
- 1/2 c. chopped onion
- 2 garlic cloves, minced
- 4 1/2 c. fresh mushrooms, chopped
- 2 c. chicken broth
- 2 c. milk
- Salt to taste
- Garnish with chives or minced parsley
Preparation
Step 1
Saute onions and garlic in butter. Add mushrooms and saute about 10 minutes, until they begin to lose their juice. Add broth, bring to a boil and remove from heat. Blend flour into milk until smooth. Add to vegetable mixture return to heat and bring to a gentle boil, reduce heat and stir constantly until thickened. For a more favorable soup puree soup with immersion blender. Season with salt to taste. Garnish with chives or minced parsley.
