Spinach and Pine Nut Pasta

Ingredients
- 8 ounces of pasta
- 1/2 cup olive oil
- 2 garlic cloves crushed
- 1 onion quartered and sliced 8 ounces spinach
- 2 tbsp pine nuts
- 6 tbsp. dry white wine
- Sliced mushrooms salt and pepper
- Parmesan to garnish

Preparation
Step 1
Cook pasta
Heat oil in large saucepan and saute garlic and onion for one minute
Add the sliced mushrooms and cook for two minutes
Add the spinach and cook for four minutes until spinach is wilted
Stir in the pine nuts and wine, season well with salt and pepper and cook for one minute more
Transfer pasta to a warm serving bowl, add sauce and toss, mixing well.
Garnish with Parmesan cheese.
