Calf s Liver with Dijon

Ingredients
- 1 1/2 1 1/2 1/2 tsp olive oil
- 1 1 1 Spanish onion sliced
- 4 4 4 slices of calves liver
- 1/2 1/2 1/2 cup flour
- 2 2 2 tbsp butter
- 1/2 1/2 1/2 cup chicken stock, heated
- 1 1 1 tsp Dijon
- 1 1 1 tbsp chopped fresh parsley.
- to pepper and lemon juice to taste

Preparation
Step 1
Heat oil in large skillet over medium heat.
Add onion and cook 12 minutes.
Season and add lemon juice. Mix well and remove onion from pan
Season pieces of liver well and dredge in flower.
Add butter to hot pan and cook liver on medium heat, do not overcook.
Transfer liver to serving plate and keep warm.
Return cooked onion to pan, pour in chicken stock and Dijon
Mix well and pour over liver.
