Vanilla Sugar Cookies

Ingredients
- 1 cup (2 sticks) butter softened
- 11/2 cups granulated sugar
- 2 tsp cream of tarter
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
- 1 tsp vanilla extract
- 21/3 cups flour
- Granulated sugar

Step 1
Beat butter in large bowl with mixer on medium until light and fluffy. Add 1-1/2 cups sugar, cream of tarter, baking soda and salt; beat until well blended. Beat in eggs and extract. Beat in as much flour as possible with mixer. Stir in any remaining flour. Cover. Refrigerate 2 hours or until dough is firm. Shape into 1 inch balls. Roll in sugar. Place 2 inches apart on ungreased cookie sheet.
Bake in 375* oven 8 minutes or until lightly browned.
Use a variety of extracts.
