This delicious recipe was, I believe, from a weight watchers recipe book, however I have since modified it. I like to serve it on a bed of rice with mixed veggies.

Ingredients

  • 2 Boneless skinless chicken breasts
  • 1 Can of condensed cream of chicken soup
  • 2 tblsp of smooth peanut butter
  • 1/4 cup of milk
  • 1/4 cup of green onions cut to 1/2 inch
  • 1 tsp chili powder
  • 1/4 tsp crushed red pepper
  • Vegetable cooking spray

Preparation

Step 1

Cut chicken in half lengthwise
Spray skillet with oil and brown chicken on both sides
Remove from skillet
Add soup, peanut butter, milk, green onions chili powder and red peppers to skillet
Blend well and bring to a boil.
Add chicken and simmer over low heat until the meat is no longer pink in the center
