Tuna Muffins

Ingredients

  • 2 cups cooked rice
  • 1 cup grated cheese
  • 1 can tuna, drained
  • 1 Tbsp dried minced onion
  • 1 Tbsp dried parsley
  • 1 1/2 tsp seasoned salt
  • 2/3 cup black olives, sliced
  • 2 eggs
  • 2 Tbsp milk
  • 1/4 stick margarine
  • 1 Tbsp lemon juice

Preparation

Step 1

Mix together rice, cheese, tuna, onion, parsley, 1 tsp seasoned salt, and black olives. Beat eggs and milk together and add to other ingredients.
Bake at 350° in greased muffin tins.
Melt margarine with lemon juice and 1/2 tsp seasoned salt. Drizzle over tops after cooking.
