Moroccan Tomato Soup

Peanut butter gives this delicious soup its creamy texture and adds protein. If you love a little heat, double the cayenne pepper. A sprinkling of peanuts makes an attractive garnish, if desired.

Ingredients
- 2 onions chopped
- 2 cloves garlic chopped
- 2 tablespoons packed brown sugar
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 pinch cinnamon
- 1 can chopped tomato
- 2 cups water
- 1/4 cup tomato paste
- 1 tablespoon red wine vinegar
- 3/4 cups smooth peanut butter
Preparation
Step 1
In slow cooker, combine onions, garlic, sugar, chili powder, cumin, pepper, salt, cayenne pepper and cinnamon. Stir in tomatoes, water, tomato paste and vinegar.
Cover and cook on low for 5 to 8 hours.
Add peanut butter; using immersion blender, puree soup until smooth.
