Luscious layers of cream cheese, coconut pudding, whipped topping and toasted coconut sit atop a nutty baked crust for a truly decadent dessert.

Ingredients

  • Crust:
  • 1 cup flour
  • 1/2 cup butter, melted
  • 2 tablespoons sugar
  • 1/2 cup pecans, chopped (Optional)
  • Filling:
  • 8 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 cup whipped topping
  • Topping:
  • 1 small package coconut cream instant pudding
  • 1 1/2 cups whole milk
  • 1 cup whipped topping
  • 1 cup coconut flakes, toasted

Preparation

Step 1

Preheat oven to 350°F.

Crust:
Mix all ingredients and press into an 8 by 8 inch square pan.

Bake 15-20 minutes, until just beginning to turn golden. Do not over bake. Remove from oven and cool.

Filling:
Beat together cream cheese and sugar. Fold in whipped topping. Spread on cooled crust.

Topping:
Mix instant pudding and milk until thickened. Spread over cream cheese mixture.

Top with whipped topping.

Sprinkle coconut evenly on dessert. Refrigerate.
