- 1 3/4 c. flour
- 1/4 c. sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 beaten egg
- 3/4 c. milk
- 1/3 c. vegetable oil

Step 1
Sift dry ingredients into bowl. Make well in center. Combine egg, milk and oil. Add all at once to dry ingredients. Stir quickly just until dry ingredients are moistened. Fill muffin pans 2/3 full. Bake at 400° about 25 minutes.
For blueberry muffins fold in 1 c. fresh or thawed and well-drained frozen blueberries.
For cranberry muffins fill muffin pans 1/3 full. Cut 1 can of jellied cranberry sauce in 1/2" cubes and sprinkle over batter. Add remaining batter.
