White Chocolate Buckeyes

Ingredients
- 1/2 cup butter, softened
- 1 1/2 cups creamy peanut butter
- 3 cups powdered sugar
- 24 ounces white chocolate almond bark, or white chocolate baking chocolate, coarsely chopped
- 1/2 cup peanut butter chips, for drizzling, if desired

Preparation
Step 1
1.In a large mixing bowl, beat butter, peanut butter, and powdered sugar.
2.Line a large baking sheet with parchment paper.
3.Roll the dough into 1-inch balls, and place on the baking sheet.
4.Freeze for at least 2 hours, or ideally overnight.
5.In a medium microwave-safe bowl, heat the chocolate at 45-second intervals until melted and smooth.
6.Using a toothpick or candy-dunking tool, dip each Buckeye into the chocolate, tapping off the excess.
7.Place on the parchment paper, and allow to set.
8.In a small microwave-safe bowl, heat the peanut butter chips for 30-60 seconds, or until melted and smooth.
9.Drizzle over the Buckeyes, and allow to set.
