Vegetable Beef Soup

Ingredients

  • 1 lb. stew meat cut up
  • 1 onion chopped
  • 2 stalks celery chopped
  • 1 clove garlic
  • 4 c. beef broth
  • 2 c. V-8
  • 1 c. water
  • 1 bottle of beer, optional
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 bay leaves
  • 2 Tbs. Worchestershire sauce
  • 28 oz. can seasoned diced tomatoes
  • 2 potatoes
  • 4 carrots
  • 1 c. corn
  • 1 c. beans
  • 1 c. peas

Preparation

Step 1

Brown meat in olive oil. Remove from pan. Add more oil and saute onion, celery and garlic.
Return meat. Add broth, V-8, water, bay leaves, canned tomatoes, Wor. sauce,salt and pepper.
Simmer 1 hour.
Add vegetables and cook until tender.
